Ennai katharikai kuzhambu is a flavourful curry made with goodness of baby brinjals cooked in a tangy tamarind sauce. It is a very popular dish in South India. Ennai katharikai kulambu or oil egg plant curry curry goes well with any kootu side dish.

 Ingredients

Brinjal – 5 no. ( small size )

Ground tomato – 1

Onion – 1/4 cup

Garlic – 1/4 cup

Mustard seed – 1/4 tsp

Cumin seed – 1/4 tsp

Fenugreek seed – 1/4 tsp

Urad dal – 1/4 tsp

Sugar – 1/2 tsp

Coriander pdr – 1 1/2 tsp

Dry chilli pdr – 1 tsp

Fennel seed pdr – 1/2 tsp

Turmeric – pinch

Tamarind – amla size

Hing / Asafoetida – pinch

Curry leaves

Method

1. Choose 5 small egg plant, split it like a flower.

2. Heat a tsp of oil and fry the brinjal till tender.

3. In another pan add 2 tsp of oil and splatter mustard seed, cumin seed, fenugreek seeds and urad dal. Add hing and curry leaves.

4. Saute onion and garlics till they turn brown.

5. Now add fried brinjals, add corinder pdr, chilli pdr, fennel seed pdr, and turmeric pdr.

6. This is the time to add ground tomato puree ( ground tomato gives colour and thickness to the gravy ). Saute all these ingredients for about 2 minutes.

7. Add tamarind extract with required water to cook. Add salt as per your taste.

8. Adding a tsp of sugar will give a mild sweet taste to this ennai katharikkai kulambu.

9. Cook this oil brinjal curry in medium flame till brinjals become tender.

10. Now you can serve this ennai katharikai kuzhambu with hot steamed rice.

  1. Hi. I need to know the quantity of tomatoes to be added in the above recipe. U have not mentioned tomato in the ingredients list.
