Vendakkai varuval – Okra fry recipe – Bhindi fry

In this okra fry recipe, boiled potato and spices are stuffed and shallow fried to get yummy ladies finger fry. Try this spicy vendakkai varuval / bhindi fry. Tamil video of this recipe is embedded below.

Ingredients

Ladies finger / bhindi / vendakkai –  10 to 15 no

Boiled potato – 1/2

Onion – 1/2

Lemon juice – 1/4 tsp

Chili pdr – 1 tsp

Coriander pdr – 1 tsp

Cumin seed pdr – 1/2 tsp

Turmeric pdr – 1/5 tsp

Salt

Method

1. Make a slit on each bhindi vertically without cutting into two halves.

2. Grind all the other ingredients and make a fine paste ( can add 1 or 2 tsp of water to grind )

3. Fill each okra / bhindi with the ground spice mixture.

4. Heat 2 tbsp of oil in a kadai, shallow fry the aloo stuffed vendakkai / okra till done.

5. Serve this okra fry / vendakkai varuval with chapati or curd rice ( key to learn bitter melon chips )
