Ingredients

Idli rice – 1/4 cup

Urad dal – 1/4 cup

Ragi flour / Finger millet flour – 1/4 cup

Cooked rice – 1 tsp

or

Poha / aval – 1 tsp

Salt


Method

1. Soak urad dal and rice in water for 1 hour. Do not discard the soaked water as it speeds up the fermentation. Use this soaked water to grind urad dal and rice. Grind urad dal & rice ( with a tsp of cooked rice ) to fine batter.

2. Mix the ground batter with ragi / finger millet flour to idli batter consistency. Add salt & mix well. Let this finger millet idly batter rest for 8 hours.

3. After 8 hours, you can make idlies from fermented batter. Serve this ragi idli or finger millet idly with any chutney as for ordinary idlies

Note

I have added a tsp of cooked rice to speed up the fermetation. You can add a tsp of poha / aval instead. Make sure your idli pan is hot enough before you pour the batter on the mould.
