Dry chilli – 75 g

Coriander seeds – 2 1/2 tbsp

Toor dal / Thuvaram paruppu – 1 tbsp

Raw rice – 1 tsp

Cumin seed – 1 tsp

Fenugreek seed – 3/4 tsp

Mustard seed – 1/2 tsp

Turmeric pdr – 1/2 tsp

Asafoetida / Hing – 1/2 tsp


1. Dry fry chillies for 5 minutes on low flame. Set aside

2. Dry fry all spices till they start crackle and begin to change its colour. Don’t fry hing and turmeric pdr as it burns easily. Stir Continuously. Keep it aside and let it cool down.

3. Grind chilies to fine pdr, in this same mixer grinder you can grind fried spices with chilli pdr. Don’t forget to add asafoetida & turmeric pdr. You can store this sambar podi in a glass for 4 to 5 months.

Ingredients to  basic sambar

Choose any vegetable – 2 cups

Shallots – 5 to 7

Garlic cloves – 2

Tomato – 1

Sambar podi – 2 tsp

Coconut pieces – 4

Tamarind – small amla size

Mustard seed – 1/2 tsp

Urad dal – 1/2 tsp


1. You can use cooked toor dal instead of coconut pieces, if so you need not to grind anything. In this video I ground coconut pieces, sambar podi, tamarind to fine paste.

2. Add this ground paste with all vegetables. Add salt & 1/2 cup of water for cooking.

3. In a kadai heat a tsp of oil, splutter mustard seed, urad dal. Pour this seasoned oil with raw vegetable, sambar podi,coconut mixture. Let it cook for 2 sounds ( 10 minutes on high flame in a pot )

4. Simple basic sambar is ready to serve.
