Semia / Sev – 1 cup

Milk – 1/2 litre

Cashews – few

Sugar – 1 cup

Milk maid – 100 ml ( sweet condensed milk )

Ghee – 2 tsp

Cardamom pdr – 1/4 tsp

1. In a kadai heat a tsp of ghee and fry cashews till golden brown. Set aside the fried cashews. In this same kadai, fry sev / vermicelli for 3 or 4 minutes till it starts to change colour. As this process is going on, heat 2 cups of water in a separate pot to cook semia / sev/ vermicelli.

2. Now put fried semia into the boiling water and let it cook for 5 minutes or till it softens on medium flame. Stir in between to avoid sticking to the pan.

3. Now add 1/2 liter milk with this cooked semia / sev.  Add 100 ml of milk maid ( condensed milk )or 3/4 cup of sugar, ( to taste ), cardamom pdr and mix well till it dissolves completely.  Once semiya payasam boils, turn off the flame and garnish this vermicelli kheer with fried cashews.
