Vegetable kurma /idly,dosa,chapati side dish

Ingredients 

Carrot, Peas, Beans, Onion, Potato – 1/4 cup each

Chickpea – 1 cup ( soaked in water for 8 hours )

Tomato – 1

Seasoning ingredients

Mustard seed – 1 tsp

Fennel seed – 1/2 tsp

Cumin seed – 1/2 tsp

To Grind 

Almonds – 10

Cashews – 5,6

Poppy seed  ( kasa kasa ) – 1 tbsp

Fennel seed – 1/2 tsp

Coconut – 1/4 cup

Dry chili – 5 to 6

Garlic cloves – 2

Ginger – small piece


Method

1. Heat a tsp of oil in a kadai and fry all the ingredients under ‘ To Grind ‘ – make a fine paste and set aside.

2. Pressure cook the soaked chickpea for 4 or 5 sounds. – set aside

3. In a kadai heat 2 tbsp of oil & add mustard seed, fennl and cumin seeds, once it splutters, saute onion and other chopped vegetables for 2 minutes with tomatoes – Pressure cook these vegetables for a whistle sound with required water and salt.

4. Now add cooked chickpea with all other cooked vegetables. Add ground masala paste also. Check salt and let it boil for 5 to 10 minutes on high flame. stir this vegetable kurma occasionally.

5. Now you can serve this veg korma with idly, dosa, chapati, bread.
